Abstract

PURPOSE: To prepare a pigment for Chinese noodles, having clear yellow color with high fading resistance, by adding alum to rutin.
CONSTITUTION: 1pt.wt. of rutin is mixed homogeneously with 3W100pts. of an alum (e.g. potassium alum, ammonium alum, etc.), and the powdery or liquid mixture (using ethanol, etc. as the solvent) is added to the raw material of the Chinese noodles. When safflower pigment is added to the above mixture in an amount of ≤20pts., the color tone is improved and the light resistance is increased.
