Abstract

PURPOSE: To provide a gel having high gel strength and elasticity and low tendency of syneresis, by adding a natural polysaccharide or a water-soluble cellulose and a water-soluble alkali metal salt to cellulose sulfate.
CONSTITUTION: A gel composition is obtained by using cellulose sulfate as the main component, and adding one or more materials selected from natural polysaccharides such as locust bean gum, gum guaiac, tragacanth gum, agar, carrageenan, gum arabic, pectin, dextran, pullulan, etc. and water-soluble cellulose derivatives sush as hydroxycellulose, hydroxyalkyl cellulose, etc., and a water- soluble alkali metal salt such as potassium chloride to the cellulose sulfate. The gel composition can be gelled by adding water to the composition, dissolving by heating, and leaving to stand at the room temperature. It can be used in the food, cosmetic, and medical fields.
