Abstract

PURPOSE: To obtain a cheese food having various shape and attached firmly to a bar, by filling a mold with molten cheese, inserting a bar into the cheese, freezing the cheese as a whole, heating the interface between the cheese and the mold, and releasing the cheese from the mold.
CONSTITUTION: Molten cheese is filled in a mold, and a bar is inserted into the cheese leaving its upper end above the cheese. The cheese is frozen to fix the cheese to the inserted bar. The mold is heated from outside to effect the slight melting of the interface between the cheese and the inner wall of the mold, and the cheese with the bar is released from the mold. The molten surface of the cheese is sprinkled with powdery or granular hydroscopic food such as starch, microcrystalline cellulose, etc., and the cheese is packaged.
