Abstract
PURPOSE: To prepare ice cream containing fine ice granules, having plain taste, free from extraneous feeling of the ice granules, continuously, by mixing ice cream mix with syrup containing fine ice granules obtained by the growth of crystalline nuclei, and cooling the mixture at a definite temperature under stirring.
CONSTITUTION: The syrup stored in the tank 1 is fed to the super-cooling cylinder 3 having the cooling jacket 5 by the pump 2, and super-cooled to -0.5W -7°C under stirring with the dasher 6. The super-cooled syrup is transferred through the pipe 8 to the nucleating cylinder 9 furnished with the cooling jacket 10, and cooled at -0.2W-3°C under stirring with the dasher 11. Crystalline nuclei are formed by the process, and the syrup containing fine ice granules is obtained. Separately, the ice cream mix stored in the tank 12 is transferred through the pump 13 and pipe 15 to the ice cream cylinder 16, and stirred under cooling. The obtained ice cream is supplied, together with the ice-containing syrup supplied from the cylinder 9, through the pipe 17 to the crystal growing cylinder 20 and stirred under cooling at a definite temperature.
