Abstract

PURPOSE: Forced dispersion type homogenization and emulsification are effected on soybean or soybean protein to produce emulsified dressing of especially increased heating stability.
CONSTITUTION: Soybean milk or soybean protein is combined with vinegar, salt, sugar, chmical flavors or other flavors, mustard, pepper or other spices, further acid-resistant and salt-resistant emulsiion stabilizer such as xanthane gum, pectin or alginic acid in such amounts as the titrated acidity becomes about 0.5W3 to prepare the aqeuous phase. The resultant aqueous phase is subjected to forced dispersion type homogenization and emulsification under 50W400kg/cm2 homoegenization pressure, then food oil is added and they are emulsified.
