Abstract
PURPOSE: A seasoning of high sugar concentration is brought into contact with silica gel under heating to effect adsorption of precipitation-causing substance in a short time and remove it.
CONSTITUTION: A seasoning of high sugar concentration, containing more than 30w/v% total saccharides, such as MIRIN (sweetened Japanese SAKE for seasoning), MIRIN-like seasoning or a seasoning prepared by fermentation, is brought into contact with porous silica gel, preferably of 200W400m2/g surface area, 0.8W0.2ml/g void volume and less than 20μ average particle size at a ratio of 0.25wt. of the gel to the volume of the seasoning under heating at higher than 50°C.
