Abstract
PURPOSE: As they are flying in air, spores and mycelia of fungi feeding on dried bonito are brought into contact with dried bonito on its wetted surface to make sure to effect uniform mildewing on the whole surface of the dried bonito.
CONSTITUTION: Shavings of dried bonito are placed in a plastic cage of such a mesh as shavings cannot come through and placed into a mildewing room kept at appropriate temperature and humidity. After a short while, the air on the surface comes into contact with cold shavings to form dew drops and wet the shaving surface. Under this condition, an air blower or compressed air is utilized to make spores or mycelia of a good mold strain fly in the air. After these spores and mycelia stick to the surface of the dried bonito, the temperature and humidity in the chamber is controlled properly to effect germining, mildew-growing as prescribed to make mildewed "KATSUO BUSHI".
