Abstract

PURPOSE: To prepare L-alanine and/or D-aspartic acid with a microorganism, by inactivating only the alanine racemase activity of the microorganism having the L-aspartic acid β-decarboxylating enzymic activity with the acid treatment.
CONSTITUTION: A microorganism, e.g. pseudomonas dacunhae IAM-1152, or an immobilized microorganism, having the L-aspartic acid β-decarboxylating enzymic activity is brought into contact with an acid, e.g. acetic, lactic or hydrochloric acid, at a pH of 3W6, preferably 4W5.5, to inactivate only the alanine racemase activity of the microorganism selectively. L-aspartic acid, DL- aspartic acid or a salt thereof is then reacted with the microorganism.
