Abstract
PURPOSE: To prepare refined "sake" having smooth taste and servable without danger of hangover, by isomerizing the glucose in refined "sake" to fructose with glucose isomerase.
CONSTITUTION: A specific amount of a glucose-isomerizing enzyme, e.g. glucose isomerase, is added to a refined "sake", and the mixture is maintained at 8W40°C and pH3W6 for about 24hr to isomerize the glucose in the refined "sake" to fructose.
