Abstract
PURPOSE: To measure spectral transmission characteristics of a food and to know the cooked state of the food accurately, by providing the titled detector with photoelectric conversion means which receive light rays transmitting through a protein- containing food and carry out photoelectric conversion.
CONSTITUTION: The titled detector consists of the light rays transfer means 3 and 4, e.g., glass fibers, which are faced each other at a given interval in the protein- containing food 8, the light source 2 providing the opposite part with light rays through the light ray transfer means 3, the photoelectric conversion means 5, receiving the light rays transmitting through the food 8 at the opposite part through the light transfer means 4 and carrying out photoelectric conversion, etc. By the detector, the reduction in the spectral transmission of the protein-containing food 8 which lowers its spectral transmission with the proceeding of cooling by heat is detected as the change of voltage of power output to measure the roasting state of the food accurately.
