Abstract
PURPOSE: To suppress sugar-amino reaction, etc. caused by oxygen, and prevent the browning of cooked rice and the generation of ill odor, during the preservation of cooked food in a food warmer at a high temperature for a long period, by contacting a deoxygenating agent with the atmosphere in a closed food container.
CONSTITUTION: The inner lid 8 of a jar-type rice cooker is furnished with a holder 15 to hold a container 14 for a deoxygenating agent. The container 14 is a closed- end cylinder containing a deoxygenating agent 16 and closed with a cap. An opening is provided at the upper side wall of the cylinder. The deoxygenating agent 16 is composed mainly of sodium dithionate, and its deoxygenation and CO2-removal reactions are accelerated at a high temperature. Usually, the agent reduces the oxygen content to 1/100 of the original level within 1hr when put in a food package. Accordingly, it is capable of suppressing the sugar-amino reaction, amino-carbonyl reaction, etc. caused by the presence of oxygen, and preventing the browning of cooked rice and the generation of ill odor when used in a food cooker for preserving the cooked food at a high temperature.
