Abstract

CONSTITUTION: Before measurement, an antioxidant is added. The antioxidant is oxidized due to the initial oxidation of oils and fats. The oxidized antioxidant is measured by an electron spin resonance method to determine the initial oxidation level of the oils and fats. The initial oxidation level of oils and fats which acidify, other oils and fats which can acidify, substances which contains such oils and fats, etc. can be measured. Dibutylhydroxytoluene, dibutylphenol, α-tocopherol or the like is used as the antioxidant. The quantity of the antioxidant to be added to the oils and fats is 0.5W3% thereof.
