Abstract
PURPOSE: To enhance sedimentation preventing effect of a bevarage without losing a flavor thereof, in preventing the sedimentation during preservation of the beverage or the like, by using tannic acid in which a content of a phenolic compound is lowered by purification.
CONSTITUTION: A commercial tannic acid is purified to adjust a content of a phenolic low molecular compound to 0.5% or below. The resulting purified tannic acid is added to a soft drink, a beer or the like in an amount of about 100ppm to remove protein or the like contained in the beverage by sedimentation. When said purified tannic acid is concentrated and processed into a powder form, it can be preserved stably for an elongated period of time.
