Abstract

PURPOSE:Pigments included in beefsteak plants are extracted with an acidic solution, adsorbed on an adsorption resin, eluted with an organic solvent-water system and adjusted in pH to a specific value to cause precipitation, whereby the titled pigment used for food and medicines is obtained with industrial advantage. CONSTITUTION:Beefsteak plants are dipped in an acidic or neutral aqueous system to cause the elution of the pigments included in the beefsteak plants where the green beefsteak plant contains flavonoid yellow pigments and the violet beefsteak plant contains anthocyanine red pigments and the eluted pigments are adsorbed on an ion-exchange resin or adsorption resin. Then, the resin is dipped in a dilute alkali aqueous system (e.g., containing sodium hydroxide) or an organic solvent- water system (e.g., containing methanol) to elute the pigments. The resultant aqueous system is made lower than 4 in pH with a mineral or organic acid to cause the precipitation of the flavonoid yellow pigments and keep the red pigments in the aqueous system. Both of them are concentrated and dried separately to collect the objective pigments.
