Abstract
PURPOSE: To obtain seed gum which has high viscosity and excellent transparency and shelf stability and is useful as thickening agents and lusteing agents for various foods, by a method wherein a filter aid is added to a suspension of a vegetable seed gum, and the resulting suspension is filtered by using a filter which is precoated with a filter aid.
CONSTITUTION: The husk of a vegetable seed is removed and the seed is crushed. Then germ is previously removed to obtain a gum. To the 0.5W2wt% aq. suspension of the gum (e.g. guar gum or locust bean gum) is added 0.1W1wt% (based on the amount of the suspension) filter aid (e.g. diatomaceous earth, activated carbon or wood pulp). The addition of 0.05W0.5wt% activated carbon together with the filter aid to the suspension has an effect on decolorization, deodorization, etc. Then the suspension is filtered by using a filter which is precoated with a filter aid. The amount of the filter aid to be precoated is usually 0.01W0.1g/cm2 of filtration area. Though the obtained vegetable seed gum as such can be used, it can more easily be used, when the seed gum is dried to a powdered form.
