Abstract
PURPOSE: To prepare frozen potato free from cracks and having the same palatability as the one before freezing, by the two-step freezing of steamed or boiled potato with liquefied gas coolant, which comprises the first rapid freezing and the second slow freezing.
CONSTITUTION: Washed potatoes are steamed or boiled slowly taking care not to cause cracking. The cooked potatoes are precooled to 20W40°C, and rapidly frozen with inert liquefied gas such as liquid nitrogen at -50W-30°C. The rapid freezing is terminated when the core temperature of the potato is lower than the temperature range wherein the α-starch changes into the β-starch and higher than the freezing temperature. After the rapid freezing, the half-frozen potato is put into a freezer and frozen slowly at about -20W-25°C to the core of the potato.
