Abstract

PURPOSE: The bottom part of the frying vessel is filled with a liquid or water heavier than the frying oil and only the frying oil is heated to fry bean curd, whereby the oxidation of the drying oil is prevented.
CONSTITUTION: The lower part of vessel 1 is filled with a liquid heavier than the frying oil such as water 9 and the upper part is filled with the frying oil 10. Cooling means 3 is provided beneath the boundary surface of both liquids 11 and heater 2 is fitted above the boundary surface. The oil part above the heater is kept at 150W 200°C in which frying is conducted, meanwhile the boundary surface is kept to lower temperatures of about 60°C. Thus, fried bit wastes and suspensions come down to the bottom and the frying oil is always kept clean just as filtered.
