Abstract

PURPOSE: An oil emulsion including glucose is fermented with a bread yeast and made into a powder to produce a fat-containing powdered food of high oxidation resistance with a good fermentation smell imparted.
CONSTITUTION: Glucose is added to an oil emulsion by 5W10% based on the powdered product to be obtained and the mixture is fermented with a bread yeast. Then, the fermentation mixture is spray dried into a powder.
