Abstract

PURPOSE: To obtain a high-protein fraction in high yield, by sieving crushed defatted soybeans to remove the seed coats, by classifying the crushed under size with a dry air current to separate a fraction under a specific size, which is further ground to separate a fraction of specific size.
CONSTITUTION: Defatted soybeans are crushed to give fragments, 70W90% of which have a size of about 800μm or less. The fragments thus obtained are sieved with a 60W1000μm screen to remove the oversize seed coats. The undersize part is then ground into particles, 70W95% of which have a size of 30μm or less to separate a fraction of particle size 25W35μm or less. The resulting powder is further ground to give fine particles, 70W95% of which have a size of 20μm or less, by a fluid energy mill having the functions of rubbing off and finely dividing carbohydrates on the protein bodies. The powder is then classified to give a fraction comprising 80% or more of particles having a size of 5μm or more. Repeated milling and classification operations permit defatted soybean powder with a higher protein content.
