Abstract
PURPOSE: Methyl phenylalanate is added to a dipeptide ester resulting from reaction of methyl phenylalanate and an aspaltic acid derivative to produce title compound useful as an intermediate of sweetening agent in high efficiency.
CONSTITUTION: The reaction between (A) N-benzyloxycarbonyl-aspaltic acid and (B) methyl phenylalanate is effected in an aqueous medium in the presence of a metal protease to form the adduct of (A) and (B), wherein when the concentration of (B) is kept over 10-1mol/l, the adduct of the dipeptide ester and (B) is separated, thus producting the adduct of N-benzyloxycarbonyl-L-aspaltyl-L-phenyl- alanin methyl ester and methyl phenylalanate.
