Abstract
PURPOSE: The addition reaction of methyl phenylalanate to a dipeptide ester from aspaltic acid and methyl phenylalanate to efficiently produce title compound as an intermediate of sweetening agent.
CONSTITUTION: The reaction between (A) N-benzyloxycarbonyl aspaltic acid and (B) methyl phenylalanate is effected by standing them in an aqueous medium in the presence of a metal protease to form the dipeptide ester, to which further (B) methyl phenylalanate is added to produce the adduct.
