Abstract
PURPOSE: To maintain the reaction liquid in an optimum pH region in the reaction of a decarboxylase wherein the reaction liquid is shifted from the optimum range to the alkaline region with the progress of the enzyme reaction, by keeping the reaction system under pressure.
CONSTITUTION: The reaction system of decarboxylation by an enzyme-containing substance (A) catalyzing the reaction is kept at a pressure of 2W50kg/cm2 to dissolve carbon dioxide which is formed as a byproduct with the progress of the reaction or fed to the system in the reaction liquid. Thus, the pH of the system is maintained in the optimum region. A culture fluid of a microorganism having the enzyme-producing ability or its microbial cell separated from the fluid or a treated cell may be used as the substance (A).
