Abstract

PURPOSE: To obtain a food with a uniform candy coated layer, by adding fats and oils to a candy composition to give a blend, followed by making the blend frothy and creamy through quick stirring by a mixer and by covering the food with the candy composition.
CONSTITUTION: A candy composition consisting of a saccharide as a main ingredient, an emulsifying agent, an organic acid, spice, a coloring matter, etc. is blended with 15W60wt%, preferably 20W40wt% of fats and oils, e.g., shortening, butter, etc. and blended through quick stirring by a mixer so that the blend is frothed and converted into a creamy substance with ductility and malleability. This substance is applied uniformly and thinly to pieces of food, e.g., snacks, cakes, etc. by proper means, e.g., roll coating, squeezing, etc. and the coated food is heated so that the candy coated layer is melted, sugar is changed to a caramel and set by a cooling, thus forming the food having a candy coated layer.
