Abstract

PURPOSE: To prepare koji acid stably in high yield in a short culture time, by adding a glucide to a fermentation system.
CONSTITUTION: Micro organisms, which belong to the genus Aspergillus, Penicillium, or Escherichia, and have the ability to produce koji acid, are incubated in a medium containing a glucide (G) e.g. glucose or sucrose, as a carbon source.
