Abstract
PURPOSE: A flavor modifier capable of eliminating the smell and taste of the powder of the dairy products made from defatted powdered milk, comprising a mixture of saturated fatty acids consisting mainly of 10W16C saturated fatty acids.
CONSTITUTION: A mixture of 6W16C saturated fatty acids selected from the group consisting of caproic acid, caprylic acid, capric acid, lauric acid, myristic acid, and palmitic acid, as a base is blended with not less than 90wt% of a 10W16C saturated fatty acid to give the desired flavor modifier. A lower alkyl ester of a 10W18C saturated fatty acid is optionally added.
