Abstract

PURPOSE: A chocolate for flozen food having improved hardness or snapping properties, melting in the mouth, and cool feeling, and releasability, without blooming, prepared by using fats and oils containing a specific intermediate melting-point fraction of palm oil.
CONSTITUTION: A chocolate for flozen food comprising (A) a component consisting of 30W100wt% of an intermediate melting-point fraction of palm oil consisting of (a) 60wt% or more, preferably 70wt% or more, of a 2-unsaturated-1, 3-diunsaturated glyceride, preferably 75wt% or more of which is 2-oleo-1, 3-dipalmitin, obtained by fractionating natural palm oil, and (b) 0W30wt% of any other liquid oil and/or laurin fat and oils, (B) cocoa and/or cacao mass and sugar. Chocolate rolled and conched by the conventional method is immediately frozen rapidly into any dessired shape without tempering.
