Abstract
NEW MATERIAL:Cis(trans)-5-octene-1,3-diols of formula I (R=H, COCH3). EMAMPLE:Cis-5-octene-1,3-diol of formula II.
USE: Durable aroma and flavor additives or modifiers. Esp. they have an excellent durability as a component of apple key-flavor or the similar aroma and flavor. They are added to, e.g. foods, health and sanitary goods, and pharmaceuticals.
PROCESS: For example, cis(trans)-3-hexenal of formula III and alkyl halo acetate of formula IV (X=halogen; R1=C1W5 alkyl) are subjected to the Reformatskii reaction at ca. 5W150°C in the presence of Zn to afford 3-hydroxyalkyl cis(trans)-5- octenoic acid alkyl ester. The reduction of this compound with a reducing agent, e.g. LiAlH4, gives a cis(trans)-5-octene-1-,3-diol of formula II.
