Abstract

PROBLEM TO BE SOLVED: To heat and cook a foodstuff such as a hot sandwich to a good taste in a short time by constituting a pair of heating plates to heat the foodstuff between them and an electromagnetic wave heating device to heat the foodstuff placed between the plates by irradiating an electromagnetic wave. SOLUTION: An ordered foodstuff A is taken out of kinds exhibited in a refrigerating showcase by an order of a customer, and a door of a composite heating cooker 1 is opened, and the foodstuff A is placed on a fixed heating plate 3 in a heating chamber 2. The door is closed, and when a start button is pushed, a movable heating board 4 is lowered by a vertically moving mechanism means, and heats the foodstuff A by irradiating a microwave from an irradiating antenna 5a in the heating chamber 2 simultaneously when the foodstuff is sandwiched while gently heating the foodstuff between it and the fixed heating board 3 so that the foodstuff A does not collapse. When it is heated for about 30 seconds, a heating power source is turned off by a timer, and the movable heating plate 4 rises, and at a sound like, for example, 'a ting', the door is opened, and the heated foodstuff A is taken out, and is handed over to the customer.

According to a first aspect of the present invention, the food is heated by sandwiching the food between the heating plates, and the core of the food is simultaneously heated using an electromagnetic wave heating device so that the cooking can be completed within a short time. Things. The configurations of claims 2 and 4 also have the same configuration, but in the configuration of claim 2,
Since the heating plate is sandwiched between the top and bottom of the food, the heating of the food by the electromagnetic wave heating device is performed by radiating the electromagnetic wave from the side. In the configuration of claim 4,
During the heat treatment with the heating plate sandwiching the upper and lower portions of the food material, the electromagnetic wave is radiated by the electromagnetic wave heating device from at least the upper portion or the upper portion (preferably also from the lower portion of the food material or from the side thereof), and the radiation to the core portion is performed. Heating is performed efficiently.
As a configuration that allows such radiation, as described later, it is preferable that the heating plate has a perforated configuration so that electromagnetic waves can be efficiently transmitted therefrom.

FIG. 6 shows a specific embodiment of the combined cooking device according to the fourth aspect of the present invention. In this configuration, the heating plates 30 and 40 that heat the food A in between, and the radiating antenna 5b of the microwave heating device that radiates microwaves, which are electromagnetic waves, to the food A from above the upper heating plate 40 to heat the food A. The heating plates 30 and 40 have a large number of punching holes 31 and 41 formed in the surface thereof, and have heating wires 32 and 42 such as nichrome wires built therein. in this way,
By providing the punching holes 31 and 41, microwaves emitted from the radiation antennas 5b and 5c can be heated.
0 is transmitted to the food material A from above and below, and is designed to be easily heated by microwaves. The diameter of the punching holes 31 and 41 needs to be at least 3 mm or more in order to improve the microwave transmittance. In the configuration of the above embodiment in which microwaves are radiated only from the side, while the frozen portion in order from the side to the inside of the food material A melts and dissipates as steam, the water is eliminated by the above thawing. Only the surface is burnt by the heat treatment by the heating plates 30 and 40,
The interior often remained unthawed.
However, in this configuration in which microwaves are radiated from above and below the food material A, since the microwaves reach the core of the food material A and promote quick thawing, the baking of the surface by the heating plates 30 and 40 is moderate. In addition, since the core of the ingredient A has been completely thawed and is sufficiently warm, it is possible to finish the baked condition just before eating. In order to prevent the punching holes 31 and 41 from being directly radiated to the heating wires 32 and 42 and burned out (to prevent only the heating wires from being used for heating the food material A), avoid them. Has been drilled.

Further, in the present configuration, as shown in FIG.
3 and 43, and a space is provided on the opposite surface side of the upper heating plate 40 to cover with the heat-resistant glass 44. Glass material has good thermal conductivity, but is inferior in heat storage,
The surface side to be brought into contact with the food material A may be configured so as to directly cover the surface of the heating plates 30 and 40, but if the opposite side is covered without opening a gap, heat is radiated from the surface side that is not in contact with the food material A. As a result, the heat efficiency of the upper heating plate 40 is deteriorated. Therefore, a gap is provided on the opposite surface side of the upper heating plate 40 as described above so that heat is stored there and heat radiation is suppressed. On the other hand, since the air warmed by the heat rises as it is, there is no need to store heat, especially on the side of the lower heating plate 30 which is not in contact with the food A, and it is necessary to promote the rise of the air due to the heat radiation. The surface side is configured to be directly covered with the heat-resistant glass 34. When the lower heating plate 30 is used in a floating state at least at the time of heating, as shown in FIG. 8, the air radiated from the non-contact surface side easily rises, and the heating efficiency further increases. .

FIG. 9 shows another configuration of the heating panels 35 and 45 used in the configuration of the fourth aspect. That is, in this configuration, a large number of punching holes 31 and 41 are formed in the surface, and the heating plates 35 and 45 are formed by current heating plates that generate heat by the resistance heat when a current is applied. With this configuration, it is possible to raise the temperature instantaneously because the heating itself generates heat when applied with current, without the need to incorporate the heating wire into the heating plate, which simplifies manufacturing and reduces the thickness. And temperature control becomes easier.

As described above, according to the configuration of the composite cooking device of the present invention, the foodstuffs such as frozen sandwiches and the like which are heat-resistant packaged are directly sandwiched and heated, and at the same time, heated by electromagnetic waves, thereby making the food delicious and drastically improved. Cooking time will be reduced. In the configuration in which the electromagnetic wave is radiated from the top and bottom of the food material as in the structure of the fourth aspect, the electromagnetic wave reaches the core of the food material and prompts thawing quickly, so that the surface of the food is burned appropriately by the heating plate. By the time, the cores of the ingredients have been completely thawed and are warm enough, so that they can be finished just right when eaten.
