入し、溶出液を減圧濃縮して極性脂質(リン脂質)画分
とした。なお、それぞれの画分は、TLC分析を行いト
リグリセライド画分にはリン脂質が含有されていないこ
と、リン脂質画分にはトリグリセライドが含有されてい
ないことを確認した。次いでそれぞれの画分について注
1と同様にして脂肪酸組成を測定しトリグリセライド及

上となり、アラキドン酸含有の比率が高い家禽卵である
ほど、トリグリセライド画分に占めるアラキドン酸の比
率が高くなり、アラキドン酸が100%トリグリセライ
ド画分に含有している母乳の状態に近づくことが理解で
きる。

酸に占めるアラキドン酸は8.1%であった。また、卵
黄脂質中のアラキドン酸のうち66%がトリグリセライ
ド画分に含まれていた。この卵黄油は臭いがなく調整粉
乳添加用として好ましいものであった。

個を得た。この鶏卵を割卵し、卵黄300kgを採取し、
凍結乾燥した後乾燥卵黄145kgを得た。常法により全
量抽出器に入れ1.160Lのn−ヘキサンを注入し3
0℃で30分間抽出した。ろ過器で、残渣をろ別し、ろ
液を減圧濃縮し、卵黄油65kgを得た。この卵黄油は卵
黄脂質に対して18.5%のアラキドン酸を含み、また
油中のトリグリセライド量は90%であり、トリグリセ
ライド画分の構成脂肪酸に占めるアラキドン酸は18.

ライド画分に50%以上含有させるようにすれば、アラ
キドン酸が100%トリグリセライドとして含有する母
乳の組成により近づいたものとなるので乳幼児用の調整
粉乳のアラキドン酸の供給源としてさらに適した卵黄油
が提供されたものである。
