原料タンクから供給された冷菓原料を攪拌しながら冷却
して冷菓を製造するフリーザ胴を冷却又は加熱する冷凍
機を備えた冷菓製造装置において、 昇温、保温、冷却、保冷の各行程からなる加熱殺菌運転
の保冷行程中に停電した場合、その後の復電時に上記原
料タンク及びフリーザ胴内の冷菓原料温度がいずれも所
定の保冷温度以下であれば保冷行程から運転を再開し、
上記冷菓原料温度のいずれか一方が所定の保冷温度以上
であれば停電表示を行い、初期の昇温行程から運転を再
開することを特徴とする冷菓製造装置の運転制御方法。
