Abstract

PROBLEM TO BE SOLVED: To safely obtain at low cost the subject fractionated product in an industrially advantageous way without using any organic solvent by optionally drying extraction residues produced from gluten as a kind of wheat protein by use of an aqueous acidic ethanol solution as extractant. SOLUTION: Gluten as a kind of wheat protein is subjected to extraction for 2h by use of an aqueous acidic ethanol solution prepared by adding 0.01-5.0w/v% of at least one kind of organic acid such as citric acid, lactic acid and/or malic acid to a 1-20vol% aqueous ethanol solution to separate a fractionated product predominant in gliadin, and the resultant extraction residues is obtained as the objective fractionated product consisting mainly of glutenin. Alternatively, the above residues is firtely dispersed in water and then subjected to spray drying to obtain the objective fractionated product. For this fractionated product, there is no need of any explosion-proof apparatus, working safety is high, and there is virtually no effect on its production cost dependent on solvent recovery.
