圧延ローラにおいて外周面に中心に対して左右対称にそ
れぞれ螺旋状の凹凸条溝を形成した手打風製麺装置(実
開昭54−11990)が知られる。

麺線にし、該麺線上の片面に一定間隔の凹凸を形成させ
る麺線の製造方法において、 該凹凸を形成させた直後に麺線に上下方向より抵抗を加
えることにより麺線にウェーブ形状を付与して手もみ風
の麺にすることを特徴とする麺線の製造方法。
