で全量を200gとした。この酸性(pH3.5)のタ
ンパク質含有飲料組成物を30ml容量のネジ口試験管
に充填して95℃で3分間殺菌して8℃の冷蔵庫内に1
日貯蔵後、凝集物の発生を目視観察した。結果は、表−
2に示したとおりである。本発明の方法で調整した酸性
のタンパク質含有飲料組成物では凝集沈澱物が生成せ
ず、風味が良好であった。
