Abstract

PURPOSE:To obtain a method for the cooking of aseptic rice in a container, effective for preventing the secondary contamination caused by the contact of cooked rice with air and a machine and reducing the cost of the container. CONSTITUTION:Washed rice subjected to aseptic treatment and water for rice cooking are fed into a primary container continuously formed by a deep-drawing container-forming machine and having a thickness of about 150mum, sealed with a film having several number of steam-ejection holes and successively transferred to a rice cooking machine and a steaming machine to effect the cooking of the rice. After finishing the rice cooking, the primary container is successively transferred to an aseptic clean room and put as it is in a secondary container formed with an oxygen-barrier material using a deep-drawing container forming machine. The container has a thickness of about 150mum and a size to hold the primary container. The secondary container is evacuated, filled with an inert gas, sealed and cooled to obtain the packaged rice.

2. Description of the Related Art A large amount of conventional sterilized cooked rice is cooked with a commercial continuous kettle rice cooker or a continuous steam rice cooker, then the volume of the cooked rice is weighed in a clean room and the upper surface of the container is sealed. ing. For example, as shown in FIGS. 4 and 5, after the rice is sent from the rice storage tank 40 to the rice washing machine 41 by a conveyor to wash the rice, the rice is passed through the dipping tank 42 and then placed in the pot 45 mounted on the conveyor 44 of the steam rice cooker 43. A fixed amount of washed rice and water are sequentially added, and the rice is cooked while passing through the steam rice cooker 43, and the cooked rice is placed directly on the conveyor 47 of the clean room 46 by reversing the pot 45, and the capacity measuring and filling machine. It is thrown into 48. On the other hand, while the roll film 49 is rewound and the container 53 to be molded through the molding machine 50 is sequentially sent out by the conveyor 51, the capacity is measured under the outlet of the capacity metering and filling machine 48, and a fixed quantity of cooked rice is containerized. 53
Roll film 3 while degassing in a vacuum degassing chamber 54
8 is rewound to seal the upper surface of the container, and then the inert gas is filled in the inert gas filling chamber 55, and the finished product 39 is shipped by the conveyor 52. In addition, instead of using the pot 45, the washed rice containing water is continuously placed directly on the conveyor 44 to cook the rice.

Also, there are many places where cooked rice adheres, such as a pot, a conveyor, and a filling machine, and when manufacturing sterilized cooked rice, these cooked places are thoroughly washed and a sterilizer is used every time the work is finished. Since it is used for sterilization, it consumes a lot of work time and a large amount of water, resulting in large economic loss.

DETAILED DESCRIPTION OF THE PREFERRED EMBODIMENT An embodiment of the present invention will be described with reference to FIGS. In the sterilization process before cooking rice, for example, as shown in FIG. 1, the rice cut out from the rice storage tank 1 is loaded into the rice washing machine 3 by the conveyor 2. The rice washing machine 3 is equipped with a jet bubble generating device, and the washing water to be used is rice water that has been subjected to pie water or ceramic treatment by the water treatment device 4 and has a water cluster number of about 10.
Bacteria such as bran, oil, and Bacillus bacteria that have adhered to the surface of rice grains are peeled and removed by washing rice using the jet bubbles.

In the steam rice cooker 15a, a plurality of sprocket shafts having a pair of left and right sprockets 29 are arbitrarily arranged at intervals so that the hanging tray 28 can be interposed, and the endless chain 30 is installed on the left and right sprockets 29. The frame of the hanging tray 28 is swingably supported by a support shaft formed by projecting the connecting pin inwardly, and the sprocket 29 is driven, so that a large number of hanging trays 28 move from the inlet side to the outlet side. The rotation speed of the sprocket 29 is adjusted so that the time taken for one hanging tray 28 to reach from the inlet to the outlet is the required rice cooking time (about 30 to 40 minutes). A plurality of steam injection nozzles 32 connected to the steam generator 31 by a steam pipe are installed on the inlet side wall of the steam rice cooker 15a.

The primary container 12 sent to the inlet by the chain conveyor 13 is pushed out by a pusher (not shown) and placed on the hanging tray 28 while keeping the inside of the machine at the rice cooking temperature. Then, rice is cooked while moving by rotation of the chain, pushed out by the pusher 33 when reaching the outlet, and the primary container 12 containing the cooked rice is placed in the chain conveyor 34 provided between the steamer 16 and the steamer 16. It is placed and carried to the steamer 16.

Industrial Applicability According to the present invention, once the sterilized washed rice is put in the primary container, it is cooked and steamed without being transferred to another container, and then stored in the secondary container as it is, and the inert gas is stored. Since the container is filled and sealed, it is possible to use a thin film, which is inexpensive, by duplicating the container, and it is possible to reduce the overall manufacturing cost by reducing the container price. In addition to preventing secondary contamination of cooked rice due to air or mechanical contact, it is possible to obtain great economic effects such as improving yield and improving working environment.

1. Washing rice and water for cooking, which have been sterilized,
Thickness 150 continuously molded by deep drawing container molding machine
After filling a primary container of about μ and sealing it with a film that has several steam outlets, sequentially load it into a rice cooker / steamer to cook rice, and the primary containers that have finished cooking rice are sequentially placed in a sterile clean room. In the clean room, a primary container that has been cooked into a secondary container having a thickness of about 150 μm, which is molded into a size capable of accommodating the primary container with a material having an oxygen barrier property by a deep-drawing container molding machine, Is stored as it is, degassed in vacuum, filled with inert gas, sealed, cooled, and finished.
