キサー等にて糊状化にし摂氏70度前後の豆乳100に
対し20〜30%程度を加え混合撹拌し凝固剤を加え更
に撹拌、冷却によりエノキ豆腐を得る。又はエノキタケ
を初めから大豆と共に粉砕し上記の方法によりエノキ豆
腐が得られるがこの場合、繊維質は、おからの方へ残
る。シイタケ等、他のキノコもコスト的に合えば使用が
出来る。現在エノキタケを具として様々の料理に使用さ
れているが、キノコの柄の部分は繊維質が最も多いが、
消化が悪いため体外に排泄されている。本発明キノコ豆
腐は柄の部分も豆腐に含有されているので体内に消化吸
収され、便秘体質の人にも効果が認められる。身近な豆
腐は日常、味噌汁の具、ヤッコ豆腐、湯豆腐、等として
食べているが、キノコ豆腐は大豆の成分とキノコエキス
の相乗効果によりガンの予防、制御の外、健康食品とし
て最適である。
