【発明が解決しようとする課題】上記した従来の緑茶の
製造工程のうち、粗揉工程から精揉工程までの処理工程
は、蒸し茶葉を加熱しながら揉捻して、茶葉の含有水分

上げるものである。この処理方式では、茶葉に縒りを掛
けるのに長時間を要するので作業性が悪いうえに、含有
水分の減少度合いをその時間に合わせるために比較的低
い温度で処理をせざるを得ないので、旨味や香味の強い
製品緑茶を得ることは出来なかった。しかもこの緑茶
は、棒状であるために急須を用いて淹れるには適してい
るが、小袋に充填するのは困難であり、しかも飲用成分
の溶出性が低いので、これをティーバッグにして用いる
ことが出来ない。かゝる不具合を解消する方策として本
発明者は、蒸し茶葉をペースト状にしたのち、これを加
熱乾燥させることによって緑茶を得る方法を見出し、既
に特許出願に及んでいる。この方式は、茶葉に縒りを掛
けて棒状に成形するための時間を必要とせず、製品緑茶
の旨味や香味を強くするための条件だけで加熱乾燥する
ことが出来るので、それだけ作業性が向上し、品質が良
く、溶出性の高い製品が得られると云う利点がある。と
ころが、蒸し茶葉の加熱乾燥は多段コンベヤ式の熱風乾
燥機によって行われるので、ペースト状にした蒸し茶葉
では乾燥機内で互いに粘着して塊状になってしまうため
に、乾燥効率が著しく低下する。そのため、処理能率が
低くなるばかりでなく、塊状になった蒸し茶葉は表層部
分のものと内部のものとで加熱乾燥の条件が異なるの
で、製品緑茶にむらが生じ、品質の低いものとなる、と
云う問題があった。本発明は、ペースト状にした蒸し茶
葉を熱風乾燥機によって加熱し、乾燥して緑茶を製造す
る方法を提供することを目的としている。

を気流乾燥の効率が高く、しかもコンベヤ式の熱風乾燥
機で乾燥するに適した粒度に破砕するようにする実施例
とすることが出来る。又、気流乾燥機は、気送ダクトの
端末付近にサイクロン形捕集機や流動層乾燥機を取り付
けることにより、蒸し茶葉の粒子の気流中の滞留時間を
調整して適正な状態になるまで気流乾燥する実施例とす
ることも出来る。
