Description
(産業上の利用分野)
本発明は、いか、たこ又は貝類からなる珍味食
品に関するものである。
本発明の珍味食品は、乾燥されているにも拘ら
ず、柔らかく、透明感をもつたもので、従来知ら
れている珍味食品とは異なつた外観と呈味性を示
すものである。
本発明は新規な珍味食品を提供することにおい
て、食品界に益するところ大なるものがある。
(従来技術及び問題点)
従来、珍味食品としては、いかを加熱してのし
いか状として切断して種々の味付けを行つたもの
が広く知られている。
たこや貝類の珍味食品は、あまりみられない
が、販売されているものをみれば、いずれも加熱
処理後味付けが行なわれている。
このように従来の珍味食品は加熱処理して保存
性を高めたものであるが、いか、たこ、貝類の生
の食感は著じるしくすぐれたもので、加熱処理し
た珍味食品とは違つた味があり、美味である。
しかしながら、いか、たこ、貝類を生のまま乾
燥させようとすると、乾燥中に細菌が増殖して腐
敗するなどの問題点があつて、従来生のものから
乾燥した珍味食品というものが製造されたことは
なかつた。
(問題点を解決するための手段)
本発明者らは、生のものから乾燥した珍味食品
を求めて鋭意研究を行つた結果、生のいか、たこ
又は貝類を糖類及びアルコールで撹拌処理し、次
いで乾燥することによつて、透明感と保存性の高
い珍味食品を得ることに成功したものである。
本発明は、いか、たこ又は貝類を糖類及びエチ
ルアルコールで撹拌処理し、乾燥してなる珍味食
品に関するものである。
本発明は、生のいか、たこ、貝類を糖類とエチ
ルアルコールで撹拌処理して防腐性をもたせ、そ
のまま乾燥処理して製造するために、乾燥工程に
おける細菌の増殖を抑制して、腐敗を防止し、生
のものがそのまま乾燥したような珍味食品を影響
するものである。
本発明において、生のいかを用いた珍味食品
は、糖類の浸透によつて全体がやわらかく、独特
の透明感をもつているにも拘らず浸透乾燥され
て、常温における保存性のすぐれた珍味食品とな
つているのである。
また、たこや貝類においても、糖類の心頭で全
体はやわらかいが乾燥されており、常温における
保存性のすぐれた珍味食品となつているのであ
る。
本発明において使用するのは、生のいか、た
こ、貝類である。
いかとしては、ロールいか、モンゴーいか、や
りいか、スルメいか、などいずれのいかでもよ
く、姿見のまままたは裁断、細断したものなどい
ずれでもよい。
たことしては、いいだこ、などがあり、一般的
には裁断、細断したものなどがよい。
また、貝類としてはアカガイ、ヒメガイ、ホタ
テ貝、アワビなどいずれでもよく、裁断してもよ
いが、そのまま使用してもよい。
本発明においては、いか、たこ又は貝類が糖類
及びエチルアルコールで撹拌処理されるが、糖類
とエチルアルコールの併用は本発明では必要欠く
ことのできない条件となつている。
糖類とエチルアルコールの撹拌処理は、糖類の
撹拌処理を先に、後でエチルアルコールの撹拌処
理でもよく、糖類とエチルアルコールを同時に用
いて撹拌処理してもよい。
糖類としてはソルビツト、グルコース、フラク
トース、マルトース、シユークロースなどが単独
または混合して使用される。糖類は原料に対し、
2〜10%、好ましくは4〜8%添加される。
エチルアルコールとしては高濃度、例えば95〜
50%エチルアルコール水溶液などがよいが、エチ
ルアルコール濃度の高い酒類を使用することもで
きる。エチルアルコールとして原料に対して2〜
10%、好ましくは4〜6%程度添加するのがよ
い。
撹拌処理法としては、撹拌機にいか、たこ又は
貝類を入れ、これに盗塁その他調味料、呈味料を
添加してよく混合し、その後80%エチルアルコー
ル水溶液を添加してよく混合し、糖類とアルコー
ルをよく浸透させて処理することができる。
また、撹拌処理法としては、撹拌機にいか、た
こ又は貝類を入れ、撹拌しながら糖類、調味料、
呈味料及びエチルアルコール水溶液を添加して、
糖類及びエチルアルコールをよく浸透させて処理
することができる。
糖類及びエチルアルコールのよく浸透したい
か、たこ又は貝類は常圧又は減圧で乾燥される。
乾燥としては5〜70℃の乾燥機(減圧乾燥機、
温風乾燥機など)によるのがよいが、特に20〜60
℃の限圧乾燥によるのが好ましい。
乾燥温度が20℃以下であると、乾燥に長時間か
かるが、20〜60℃であれば3〜20時間程度で乾燥
させることができる。
乾燥した珍味食品にはエチルアルコールの残存
はなく、すぐれた呈味性を有するものであつた。
次に本発明の試験例及び実施例を示すが、部は
重量部を示す。
試験例
ロールいかを長さ100〜130mm、幅3〜5mmに切
断したもの100部に、精製塩2.5部、ソルビツト
(粉末)5.0部、88%エチルアルコール5.0部を添
加混合したものと、エチルアルコール無添加で混
合したものを40℃恒温槽に保存し細菌数を調べ
た。
その結果次の通りである。

混ぜたものを40時間冷蔵し、添加料をタコ肉に浸
透させた後、60℃の温風乾燥機を用い水分15〜25
%となるまで乾燥した。所要時間は6時間であつ
た。乾燥物は、やわらかく、透明で美味なものと
