に食物等を入れ蓋体を施蓋した状態では、逆止弁は蓋体
の表面に密着しており、この施蓋状態のままで加熱する
と容器内が加圧され、容器内外の圧力差により上下曲げ
部及び逆止弁が共に上方に押し上がり、その間隙から容
器内の加熱された空気や水蒸気等が容器外に放出され、
加熱が終わると、逆止弁は再び蓋体の表面に密着し、冷
却が進むと容器内の圧力は次第に負圧になり、この負圧
状態は長期に亘り保持され密封が維持されるので、家庭
において調理された惣菜や料理等の食品を、簡単な装置
と簡単な操作により長期間保存できる。
