[Prior Art] Membrane separation devices equipped with porous membranes as separation means do not require thermal energy and can perform continuous separation operations, so they are used in various industrial fields such as brewing. Widely used for separation. However, in such membrane separation processing, when the treatment is carried out for a long period of time or when the quality of the processing stock solution is poor, proteins, phosphates, and even So-called fouling substances such as microorganisms are deposited and accumulated, which not only causes a decrease in the water permeation flux and separation efficiency of the membrane separation device, but also may damage the membrane separation device.

Generally, in the production of soy sauce, freshly fried soy sauce is conventionally processed for purposes such as sterilization, quality improvement, and removal of sediment.
Pasteurization is carried out by heating to a temperature of 80-85°C. Soy sauce processed in this way is called pasteurized soy sauce.
After this pasteurization, the soy sauce is filtered and shipped as finished soy sauce. Conventionally, diatomaceous earth has been used as a filter medium for filtration after burning, but in recent years, a membrane treatment method in which filtration is performed using a porous membrane has also been adopted.

[0004] However, during the filtration of pasteurized soy sauce, coagulated proteins accumulate on the membrane surface, significantly reducing the water permeation flux and separation efficiency of the membrane separator over time. Conventionally, as a method for cleaning porous membranes whose water permeation flux has decreased due to contamination with fouling substances and restoring the water permeation flux, oxidizing agents such as hydrogen peroxide and chlorine, and alkaline aqueous solutions have been used. A cleaning method using, for example, has been proposed. However, even if such a method is applied to a porous flat membrane whose water permeation flux has decreased due to the accumulation of fouling substances on the membrane surface during filtration of pasteurized soy sauce, the water permeation flux cannot be effectively restored. Therefore, there is a need for an effective method for quickly restoring the performance of the membrane separator used for filtering pasteurized soy sauce in a simple manner.

[Means for Solving the Problems] According to the present invention, when filtering pasteurized soy sauce, fouling substances are deposited and accumulated on the membrane surface, and the porous plate-like membrane in which the water permeation flux is reduced is cleaned.
The method for restoring the water permeation flux is characterized in that the porous flat membrane is washed with hot water of 60° C. or higher using a cross-flow filtration method, and then washed with an alkaline aqueous solution.

According to the method of the present invention, a porous flat membrane in which fouling substances such as coagulated proteins are deposited on the membrane surface and the water permeation flux is reduced is first heated to a temperature of 60°C.
The above is preferably treated with hot water of 70° C. or higher using a cross-flow filtration method to decompose and agglomerate the above-mentioned fouling substances, and then an alkali is added to the hot water and similarly treated using a cross-flow filtration method. . After this, if necessary,
The device is left filled with the alkaline aqueous solution, and then the membrane surface is washed with a large amount of water to remove fouling substances from the membrane surface.

[0008] Here, the cross-flow filtration system refers to a filtration system in which hot water is supplied so as to flow along the membrane surface, and a portion thereof is taken out as a membrane permeate and circulated. In the above method, it is practically advantageous to prepare the alkaline aqueous solution by first adding an alkali to the hot water used for the hot water treatment of the porous membrane. The concentration of the alkaline aqueous solution does not need to be particularly high; a concentration of 0.1% by weight or more is usually sufficient.

[Examples] The present invention will be explained below with reference to Examples.
The present invention is not limited in any way by these Examples. When pasteurized soy sauce was filtered using a plate-and-frame type filtration device equipped with a porous flat membrane made of polytetrafluoroethylene with a membrane pore diameter of 0.2 μm, the filtration rate was 238 liters per square meter per hour before filtration began. The water permeation flux was reduced to 70 liters per square meter hour due to membrane contamination by fouling substances.

[0012] Therefore, as a result of circulating hot water of 75°C or higher through the above filtration device for 15 minutes using a cross-flow filtration method,
The water permeation flux was restored to 120 liters/m2.hr. Next, add an alkali to the above hot water and add 0.1
After making an aqueous solution with a concentration of % by weight and circulating it for 15 minutes using the cross-flow filtration method, it was left to stand for 45 minutes.
When the porous membrane was immersed in an alkaline aqueous solution, the water permeation flux was restored to 220 liters/m2.hr.
