Abstract

PURPOSE:To enable sterilizing of vegetables or the like effectively by adding an organic acid to adjust pH to a set value. CONSTITUTION:For example, acetic acid is added to an ozone liquid as an organic acid to adjust pH to 3.5-4.5. A sticky substance having bacteria attached to vegetables is dissolved in the ozone liquid. This can increase a rate of sterilization up to about 99-99.99%.

In the ozonated water sterilizer shown in FIG. 3, even if vegetables etc. are irradiated with ultrasonic waves in ozonated water, the sterilization rate of bacteria firmly or densely attached to the vegetable surface is about 99%. This is because bacteria that exist in the recesses on the surface of vegetables, etc., or bacteria that protect themselves by releasing adhesive substances such as peptone, remain.

l) By adding an organic acid to ozonated water, it is possible to promote the dissolution of sticky substances such as peptone that cause bacteria to expel and adhere to vegetable surfaces. Note that excessive addition to a pt of 13.5 or less will damage the vegetables themselves and also cause corrosion of the equipment, so this should be avoided.

2) By adding an organic acid, the solubility of ozone can be increased (up to about 10 times) compared to the case of just water.

1) The sterilization rate can be increased by adding organic acids such as acetic acid to remove or sterilize bacteria that adhere to vegetables that could not be removed or sterilized even by ultrasonic irradiation in ozonated water, and dissolve the sticky substance produced by the adherent bacteria in ozonated water. 99-99% compared to the conventional 90-99%.
