Abstract

PURPOSE:To obtain the extremely effective method for sterilizing ozonized water by adding acetic acid to the ozonized water to adjust the pH to 4 to 5 and irradiating this water with ultrasonic waves of <=20KHz frequency. CONSTITUTION:The ozonized water is first adjusted to pH 4 to 5 by acetic acid to elute the protective tacky materials produced by bacteria so that the directive oxidation reaction with the ozone or the cell walls of the cells is effected. The ozonized water is simultaneously irradiated with the ultrasonic waves of <=20KHz frequency, by which the cells forming aggregate are dispersed and the effect of the pH adjustment is penetrated into the aggregate.

DETAILED DESCRIPTION OF THE INVENTION [Field of Industrial Application] The present invention relates to an improvement in a method for sterilizing foodstuffs using ozonated water.

Conventionally, ozonated water for sterilization was made by cooling the water in a washing tank with a cooler to 0 to 15° C. and then blowing ozone gas into it to obtain ozonated water with an ozone concentration of several ppm. and,
Place the ingredients you want to sterilize in the ozonated water for 15 minutes to 3 minutes.
By soaking for about 0 minutes, bacteria adhering to the food (vegetables, fish and shellfish) were sterilized by the oxidizing power of ozone.

Merely immersing foodstuffs in ozonated water at 0 to 15°C does not provide a sufficient sterilizing effect.

This is because adhesive sterilization forms agglomerates or produces sticky substances.
In addition, since ozone is not permeable, ozone exhibits a bactericidal effect only by oxidizing bacteria and sticky substances outside the agglomerate, and does not have a bactericidal effect on all bacteria. The bactericidal effect cannot be fully exerted.

The present invention is an ozonated water sterilization method characterized by adding acetic acid to ozonated water to adjust the pH to 4 to 5, and irradiating the water with ultrasonic waves having a frequency of 20 KHz or less.

By adjusting the pH of ozonated water to 4 to 5 with acetic acid (vinegar), the protective sticky substance (protein) produced by bacteria was eluted, allowing ozone to undergo a direct oxidation reaction with the bacterial cell walls. At the same time, by irradiating ultrasonic waves, the bacteria forming the agglomerates were dispersed so that the pt+ adjustment effect could reach the inside of the agglomerates.
