Although the ratio of sorbitol to isomaltose can vary, typically the ratio of glucose to sorbitol will be between 3 and 6:1 on a weight basis to obtain the compositions of the invention. Although it depends on the type of enzyme, as the ratio of glucose increases, the ratio of glucopyranosyl-1,6-sorbitol tends to increase, and as the ratio of sorbitol increases, the amount of isomaltose tends to increase.
