量が同一となるように、練り込み用油脂及び水の量を微
調整した。

A loaf of bread was produced using the same formulation and process as above, using a general kneading fat and oil (containing 18% moisture and 1.5% saturated monoglyceride). 、下記表−4におけるパンの硬さの測定及び風味テスト
の評価は次のようにして行った。

のテスト結果を示したが、食パンに限らず、各種パン、
ケーキ等に利用した場合の効果もii認されており、特
に、レーズンブレッドの様にパンの老化が比較的早く現
れるパンにはより明確な効果が発揮されている。

パン用の練り込み用油脂として好適に得られる。
