なり、吸着材を収容した容器にプレートを装着すれば保
温ができる。プレートは加熱調理や保温時には調理物に
対して均一な温度分布と温度むらをなくし、保冷時には
プレート面全体から保冷物を冷却する蓄熱性を与える。

従来の方法のように氷の使用を必要とせず食品の濃度の
低下や味の損傷が無く、この効果は極めて大きいもので
ある。
