Abstract

PURPOSE:To obtain a transparent, stable and low-viscosity solubilized substance of tocopherol, excellent in dispersibility in water and useful as an antioxidant for food by mixing and solubilizing tocopherol with saccharides, an emulsifying agent and ethanol. CONSTITUTION:The objective substance obtained by mixing 1-50wt.% tocopherol with 1-90wt.% saccharides, such as sucrose, 0.1-30wt.% emulsifying agent, such as organic acid monoglyceride and 1-10wt.% ethanol and, as necessary, other additives, such as organic or amino acid, and preparing a formulation. Water may or may not be contained and dispersibility in water is excellent in both cases.

The tocopherol solubilized product of the present invention is obtained by mixing and solubilizing the above-mentioned components as well as other additives added as necessary. The preparation method involves dissolving a part of the emulsifier and other oil-soluble components in tocopherol, while dissolving the remaining emulsifier in an aqueous sugar solution or in a liquid obtained by heating the sugar to 50 to 70°C to lower its viscosity. , ethanol, and other water-soluble components, and both were dissolved in 1. If B is combined, solubilization occurs. A high-speed stirrer, a homogenizer, etc. can be used for mixing.

Examples 1 to 3, Comparative Examples 1 to 3 Solubilized materials were prepared using a homogenizer based on the above-mentioned preparation method using raw materials in the proportions shown in Table 1. That is, an oil-soluble emulsifier was dissolved in tocopherol, and a water-soluble emulsifier and ethanol were dissolved in saccharide, and after heating to 60° C., both were mixed using a homogenizer. The obtained solubilized product was placed in a glass graduated cylinder and stored at 60° C. for 10 days, and the solubilized state and viscosity were compared. The viscosity was determined immediately after preparation at 20° C. using a B-type viscometer manufactured by Tokyo Keiki Co., Ltd. The results are shown in Table 1.

Further, the solubilized products of Examples 1 to 3 were dissolved in water at a concentration of 1% by weight and stored at room temperature for 10 days, but no abnormalities such as oil-off were observed. However, when the same test was conducted in Comparative Examples 1 to 3, oil-off occurred and oil droplets floated to the surface.
