ム発生室が連続してなることを特徴とするスチー
ムキツチンにより解決されるものである。

タ室3と下部に位置するスチーム発生室4の3つ
の部分を一体としてなつており、以下更に各部を
詳述する。加熱室2は外から内部の様子が目視で
きるよう側面にガラス窓5とともに自動温度調節
器6の温度センサ6aを有し、更に下前開口部側
端直下もしくはその近傍にはスチーム噴射パイプ
7と加熱対象物表面乾燥用ヒータ8を載置してな
り、エレベータ室3はスライド可能なドレイン排
出内パイプ9を底面部に取り付けたドレイン受け
皿10を備えてなる加熱対象物移動エレベータ1
1を内蔵するとともに上方部内周には内壁を伝つ
て下方へ落下しようとするドレインをドレイン受
け皿10に誘導するためのドレイン案内板12が
取り付けられている。そしてスチーム発生室4は
底部にスチーム発生ヒータ13と、該スチーム発
生ヒータ13に水を供給する取り外し可能な給水
タンク14を有するとともに、前記ドレイン排出
内パイプ9を受け入れてドレインを外へ排出する
ドレイン排出外パイプ15を有してなり、更にエ
レベータ室3の一側面には加熱対象物搬入搬出の
ための扉のない搬入搬出口16が設けられてい
る。尚、図に於いては作業の能率を向上させるた
めに折りたたみ収納車輪17と、例えばハムやソ
ーセージなどの加熱対象物18を載置するための
竿部19を有する加熱対象物載置台を兼ねた専用
の台車20と台車滑走テーブル21を示している
が特別に専用のものを用いなくともよいことは勿
論であるとともに前記加熱対象物移動エレベータ
11の駆動機構も既存のどのような方式のもので
も使用可能である。

射されるスチームはスチーム発生室4に内蔵した
取り外し可能な給水タンク14より供給される水
をスチーム発生ヒーター13により加熱すること
により発生させる。そして加熱室の温度は温度セ
ンサ6aにより加熱室内温度を検出し、自動温度
調節器6によつてスチーム噴射量を変化させ所定
の温度を確保する。一方、加熱室2内でスチーム
が結露して生じたドレインはドレイン案内板12
によりドレイン受け皿10に集められ、ドレイン
排出内パイプ9及びドレイン排出外パイプ15を
通つてスチームキツチン1の外部へ排出される。
そして又、加熱対象物18の表面上に吸着あるい
は結露した水蒸気は加熱対象物表面乾燥用ヒータ
8により必要に応じて加熱乾燥される。
