Abstract

PURPOSE:To easily prepare the subject paste product having a laminated sheet structure or integrated fibrous structure by forming a thin sheet of a paste product, laminating the sheet with a winding drum and peeling the laminate. CONSTITUTION:The objective product is prepared by a sheet-forming process to form a thin sheet 1 of a paste product, a winding process to wind and laminate the sheet 1 on a winding drum 4 and a peeling process to peel the laminate 6 from the winding drum 4. Preferably, a cutting process to cut the sheet 1 in the winding direction into fibrous form is inserted between the sheet-forming process and the winding process and the winding of the sheet 1 is carried out while reciprocating the sheet relative to the winding drum in the axial direction of the drum to form a laminate.

(Prior art) For example, in fish paste products, products with a fibrous structure similar to crab leg meat are widely available (commercially available, and generally have fibers running in the longitudinal direction of a rod-shaped body). It is formed by making cuts in the longitudinal direction of the sheet-shaped kamaboko, cutting it into thin pieces, binding it into an aggregated fiber-like sheet, and bundling it.Also, the direction of the fibers does not match the longitudinal direction of the rod-shaped body. This method is also shown in Japanese Utility Model Publication No. 59-41976. In this method, an intermediate product is formed of a plurality of strip-shaped sheets cut diagonally in different directions, and these intermediate products are appropriately combined and bundled. Although the gathering and bundling means are not clearly disclosed, an appropriate number of the above-mentioned belt-shaped sheets are laminated, and then cut and processed into rod-shaped bodies. In this method, incisions are formed in the longitudinal direction of a band-shaped sheet body, and after the sheet bodies are laminated, they are cut in a direction diagonal to the fiber direction to produce a rod-shaped crab leg style kamaboko with diagonal fibers. The means are shown.

(Technical problem) However, when forming the diagonally shredded intermediate product, if tension is applied in the longitudinal direction of the sheet for stacking or bundling in order to make diagonal cuts in the sheet, the sheet will There is a problem that it is easier to cut than the cut. For this reason, the cuts must be made shallowly, resulting in the disadvantage that the texture of the fibers falling apart in the mouth, which is a characteristic of fibrous dough products, is lost. In addition, when cutting diagonally after lamination (J-fiber direction can only be manufactured in a constant direction).

Next, regarding the lamination technology, the above-mentioned known examples do not fully disclose the lamination technology itself. In order to form a kamaboko made of rod-shaped bodies of diagonal fibers, it is necessary to make the width of the belt-shaped sheet body very wide or to increase the number of manufacturing lines for the belt-shaped sheet body. Although it is possible to sequentially fold and fold a single manufactured sheet into layers, it is also possible to stack fibrous sheets by making cuts to the extent that only a thin sheet is left without cutting the sheet completely. In this case, the above-mentioned thin skin portions are stacked one on top of the other, resulting in a disadvantage that the thickness of the non-fibrous portion becomes thicker.

Further, in the above manufacturing method, a cutting process of cutting the sheet body into fibers in the longitudinal direction is interposed between the sheet forming process and the winding process, and furthermore, the sheet body to be wound and the winding process are interposed between the sheet forming process and the winding process. If the winding drum is constructed so as to cause reciprocating motion relative to the winding drum in the axial direction, a dough product with a greater variety can be obtained.

(Function) By sequentially repeating the sheet forming process, winding process, and peeling process, laminated sheet kamaboko of any shape can be manufactured. If a cutting step is involved, a fibrous laminate can be formed, and if the cutting shape after the peeling step is appropriately selected, a pasted product of long fiber rods, short fiber rods, and diagonal short fiber rods can be produced.

When a fibrous sheet body is wound on a winding drum, when the fibrous sheet body is reciprocated in the drum axis direction or reciprocated in the width direction of the fibrous sheet body, the fibrous sheet body is wound on the winding drum. The fiber sheets are wound while swinging left and right in the winding direction, and by appropriately selecting the relative axial movement speed of the winding drum and the winding speed, the fiber sheets are laminated with fibers in different directions. The product is what you get.

The first step is a sheet forming step, the second step is a cutting step to impart a fibrous structure, the third step is a winding step, and the fourth step is a forming step. The first step is similar to the production of conventional crab leg-style kamaboko, in which a paste containing ground fish meat as a main ingredient is formed into a thin sheet, and this is heat-treated to form a belt-shaped sheet body 1. The molding method may be roll, extrusion, or any other arbitrary method.

In the second step, similar to the conventional method, using the cutting roll 2, the sheet body is finely cut (fiber-shaped) or completely cut in parallel with the longitudinal direction to form fibrous sheets 1 to 3.

In the third step, the fibrous sheet 3 is wound and laminated on the winding drum 4. Before the winding step, the fibrous sheet 3 is placed and rotated a certain distance, while the fibrous sheet 3 is rocked in the left and right direction. A moving conveyor 5 is provided to wrap the paper in a meandering manner. For this purpose, in addition to the above, the extrusion roll is reciprocated in the axial direction,
Alternatively, the winding drum 4 may be reciprocated in the axial direction, or both may be reciprocated together so that the fibrous sheet 3 and the winding drum 4 are relatively reciprocated in the axial direction. The fibrous sheet 3 is wound around a winding drum 4 in, for example, 20 to 40 layers to form a desired laminate 6. If the above-mentioned reciprocating motion and the winding speed of the winding drum are selected appropriately, the fiber directions of the upper and lower adjacent sheets of the stacked fibrous sheets may be different and not uniform, or they may be unified in a state where they alternately intersect. Sometimes it happens.

The fourth step is a step of peeling off the laminate 6 of the fibrous sheet 3 from the winding drum 4, followed by the necessary processing as a product.
For example, after going through a processing process such as cutting into the desired shape,
7.7', 7'' of fish cakes are obtained. 8 is a conveying means such as a conveyor, 9 is a cutter for cutting the fibrous sheet 3, and 10 is a cutter for peeling the laminate 6.

The processing step, which is the fifth step, includes, for example, a cutter 11 for forming the square-shaped kamaboko 7', and a means for applying the coloring agent P to the cut surface, such as a roll 12. 13 indicates a delivery conveyor.

In addition, in the above embodiment, if the winding drum 4 is not moved relative to the axial direction during winding, the fibers will be aligned in a certain direction, so the structure similar to the conventional crab leg style kamaboko is used. If a fiber sheet forming step is not performed, a thin sheet of laminated kamaboko can be manufactured.

It should be noted that the present invention is not limited to the above-mentioned embodiments, and may include, for example, inserting a different material such as paste or granules between the laminated layers during winding, or heat-treating the laminated product peeled off from the winding drum again. It is possible to optionally add conventionally known treatments such as seasoning and seasoning, and it is not limited to the production of crab leg-style kamaboko described above, but can be applied to all other paste products.

(Effects) As described above, the present invention is such that sheet bodies are laminated by winding on a winding drum, and the laminated products can be laminated easily and reliably, and in particular, A processed product with a special structure called an aggregate of fibers in different directions could also be easily produced by winding up a fiber sheet with axial movement to obtain a laminate of fibers in different directions. In particular, when producing a sheet body with a fibrous structure, the direction of fiber formation may be in the longitudinal direction of the belt-like sheet body, and the connected thin skins at cuts do not come into contact with the laminate, and the fibers are likely to fall apart when eaten. Furthermore, if two winding drums are prepared and winding is performed alternately, continuous production becomes possible.
