[Industrial Field of Application] The present invention relates to a method for producing a Chiyocolate confectionery having colored characters, figures, symbols, etc. (hereinafter referred to as "patterns") on the surface, particularly preferably a Chiyocolate confectionery having a multicolored pattern, etc. Regarding. [Prior Art] For example, Japanese Patent Application Laid-open No. 155665/1983 discloses that by using colored tiyocolate as ink and pouring the tiyocolate onto a multicolor pattern printed on a flat plate by screen printing means, the surface of the poured tiyocolate is A method for producing a multicolored patterned thiokolate is described, which consists of transferring a multicolored pattern. However, with this known method, the flat plate surface (mold base surface)
must have a matte, fine-grained surface, so the product always lacks luster and is matte. Moreover, as the material of the flat plate, a synthetic resin sheet that is not easily affected by static electricity is required, and in addition, expensive thiokolate is required as the ink. Another method has been announced (Special Publication No. 27783, 1973) in which fine powder of calcium carbonate, talc, etc. is poured into a mold in which a calligraphic pattern is carved, but this method naturally produces smooth printing. You can't get a good surface, and on top of that, the cost of making the mold is high. Yet another method is to place a weir plate around the printed pattern of a synthetic resin film with a pattern printed on its surface and pour in the Chiyocolate (Japanese Patent Publication No. 42-6156; Utility Model Publication No. 49-40714). However, these are essentially the above-mentioned Japanese Patent Application Publication No. 50-155665.
It is the same as the method in No. Particularly in this case, the key point seems to be the composition of the ink that enables precise transfer, but the publication is silent on this point. For processed cheese, which is a separate food from tiyocolate, it is also known to wrap the melted cheese with an edible water-soluble film printed on the inside with oil-based ink and to integrate the printed part with the solidified cheese. Therefore, there is no possibility that it can be applied to lipophilic thiocholate (Japanese Patent Application Laid-open No. 52752/1983). [Problems to be Solved by the Invention] Therefore, an object of the present invention is to develop a method for producing patterned thiokolate that allows precise multicolor printing using inexpensive ink.

[Means for Solving the Problems] (1) Concept As a result of intensive research aimed at solving the above problems, the present inventor has developed a paste-like composition in which solid oil and fat are mixed with starch or grain flour as an ink for food coloring. When using ink colored with
It has been discovered that any flat plate material can be used, including metal, plastics, wood, and glass. In other words, using this new ink composition, it is possible to transfer not only matte surfaces but also photo-selective surfaces, intaglio surfaces, and all other flat surfaces that can be screen printed, without being subject to any limitations from the material aspect. It has become clear that it can be used for In particular, when wood or stone is used as a flat plate material, the product is extremely elegant with wood grains and striae appearing on the surface, and when polished chrome plated boards such as ferrotype boards are used, products with a beautiful luster are produced. can get. The present invention is based on these findings. (2) Overview The gist of the present invention is to screen print onto a smooth board surface using a pasty colored ink whose vehicle is a mixture of solid oil and fat and starch or grain flour, and then print any shape onto this board surface. A method for producing a patterned chiyocolate confectionery is provided, which comprises placing a mold on the mold, pouring a molten chiyocolate material into the mold, and removing the mold after the material has solidified. Hereinafter, various elements constituting the invention will be explained in terms of sections. (3) Ink The base material (vehicle) of the ink used in the present invention is mainly composed of solid fats and oils mixed with starch or grain flour. and colored with any edible dye. As the starch used here, wheat starch, potato starch, cane starch, sago starch, arrowroot starch, and all other starches can be used.
Further, as the flour, all kinds of flour such as wheat flour, rice flour, barley flour, potato flour, etc. can be used, but it is preferable to use flour that does not have a unique flavor as much as possible. Next, as solid fats and oils, fats with a melting point similar to or higher than the melting point of the thiokolate material used are preferred, such as refined coconut oil, preferably medium-melting point fraction hard butter of palm oil, and hydrogenated soybean oil. be done. However, even if the melting point of this base oil and fat is lower than that of the thiokolate material, color bleeding is hardly observed because the coexisting starch or grain flour acts as a shape-retaining material. (4) Pigment The above ink base materials are colored with any food coloring. The dye here is preferably oil-soluble, but water-soluble may also be used. As an example of dyes,
For example, red No. 2, red No. 3, yellow No. 4, red No. 5,
In addition to synthetic pigments such as Green No. 3, Blue No. 1, and Purple No. 1, natural pigments such as β-carotene, annatto, carmine, grape skin pigment, hibiscus pigment, cyanut pigment, cochinyl pigment, red malt pigment, and turmeric powder, etc. can be mentioned. (5) Chiyokolate oil and fat The chiyokolate used in the present invention is preferably a white material generally called "white chiyoko." Cocoa butter is the most desirable fat that is the main ingredient for dough, but natural cocoa substitute fats such as iritzpe butter, shea butter, cocum butter, and monkey butter, fractionated fats such as palm oil medium melting point fraction, or isomerically hardened fats may also be used. Elaidinated fats and oils such as soybean oil are also freely available. The final elaidinized fat is easy to operate without requiring tempering, but on the other hand, it has the disadvantage of poor melting in the mouth, so it is preferable to use a cocoa butter-type natural fat as much as possible. (6) Flat Plate In carrying out the present invention, screen printing is performed on any flat plate in advance using the above ink. As mentioned above, the flat plates used here include metal, plastic, glass, melamine decorative board,
It may be made of any rigid material such as wood, stone (eg marble slab), etc. According to the inventor's experiments, even paper or cloth can be used, but because thiokolate has the property of shrinking during solidification, if the rigidity of the flat plate is too low, a waving phenomenon will occur on the flat plate surface. Therefore, the flat plate must have at least enough rigidity (thickness required to obtain it) to avoid deformation when the tyokolate shrinks. For this reason,
When using soft materials such as cloth or paper,
It must be lined with a board made of any rigid material. Note that cloth and paper have poor mold releasability, so it is preferable to apply a mold release treatment such as Teflon treatment. (6) Manufacturing To carry out the present invention, as shown in FIG. 1, an arbitrary pattern 2 is printed on an arbitrary flat plate 1 using the ink 5 by screen printing means (FIG. 1A). For this printing, if many colors are required, one
Colors are printed over each color, and the process of solidifying the first printing ink and then overprinting with the next color of ink is repeated. Once the printing is completed in the form of a flat plate, place it on a horizontal table, place a formwork 3 around the pattern 2 (FIG. 2B), and pour the molten Chiyocolate material 4 from above (FIG. 2H). ). After that, leave it in a cool place for a while, and after cooling, frame 3
(d) in the same figure. As the cross section of FIG. 3 shows, the ink 5 in the patterned portion 2 is mixed inside the Chiyokolate dough 4 and forms the pattern, so there is no risk of it peeling off even if the surface of the Chiyokolate confectionery 6 is rubbed. . The time required from pouring Chiyocolate to taking it out as a product varies depending on factors such as the thickness of the dough and room temperature, but it usually takes about 10 minutes for Chiyocolate for molds to accompany decoration cakes, which are the most in demand.
~30 minutes. When performing multicolor printing, it is desirable that the melting point of the oil or fat in the ink used gradually decreases from the one used for earlier printing to the one used for later printing. By changing the melting point of the printing ink vehicle in stages in this manner, there is no possibility that the previous printing will flow due to the subsequent printing. According to the present invention, it is possible to display any pattern etc. on any shape of Chiyocolate confectionery by using any number of colors and any number of colors, but normally, if about three colors are used, Enough. However, if you want to copy landscapes, paintings, etc., you will need a large number of colors. [Examples] Hereinafter, embodiments of the invention will be described with reference to Examples, but the examples are merely for explanation and have no relation to the technical scope of the invention. Example: To a paste-like base material made by mixing 10 parts of hydrogenated coconut oil (MP30℃) with 10 parts of wheat flour, 0.001% each of edible strawberry various ingredients, edible orange various ingredients, and edible thiokolate various ingredients were mixed to create three colors. I made a transfer ink for this. Next, using these inks 5, screen printing was performed on a polycarbonate plate 1 having a thickness of 10 mm to prepare a transfer plate (the printing order was thiokolate color, strawberry color, and orange color). Place a release-treated mold 3 around each pattern 2 on the upper polycarbonate plate 1, and pour in the melted white chiyocolate dough (mixture of 40% non-temper fat, 30% whole milk powder, and 30% sugar) 4. ,
After leaving it in a cold room at 5℃ for 15 minutes, remove the formwork.
A molded Chiyocolate confectionery 6 having the design (figures and letters) shown in FIG. 2 was obtained.
