には、上ジヨイント9、こね羽根10を有したパ
ン焼き型11が装着されている。ここでパン焼き
型11の内面にはこげ付き防止の処理を施してい
る。前記加熱槽12には天板15および蒸気孔1
7を有した蓋16が嵌合され、加熱槽12の蓋と
パン焼き型11の上蓋を兼用する。18は、タイ
マ、温度調節、電圧調整の回路である。温度調節
センサ19は、加熱槽12の外側のヒータ13と
同じ面に固定される。こね羽根10は第2図に示
すようにこね羽根10の主部10aを前面イと、
後面ロと底面ハとで三角をなし、かつ頂部が底辺
上に位置する三角形状に形成し、この主部10a

回路18が働き、ガス抜きに最適の回転数でこね

して二次発酵をなし、次にさらに温度を上げて焼
成が行なわれる。焼成が終わると、温度を下げて
