加熱条件の中から上記調理種類情報に応じて高周
波加熱時の高周波出力の強弱、あるいはヒーター
加熱時の上記加熱室1の設定温度を選定するとと
もに、上記信号出力部8の信号を受けた時にそれ

発せずこのまま状態で加熱が継続される。そして
加熱が進行し食品が十分に熱くなるとこの食品中
の水分の蒸発が活発になり、第3図のBに示すよ
うに食品重量Wは急激に減少する。よつて重量変
化率算出部7が算出する単位時間当りの重量変化
率値は所定置に達する程に大きくなるので信号出
力部8はこれを検知して信号を出力し、加熱制御
部9はこの信号を受けて上記調理種類情報を基に
これ以後の加熱手段及び加熱時間を自動的に設定
する(例えば、煮込み料理の場合は、ヒーター加
熱で2時間とか、高周波加熱の出力“弱”で2時
